Parmigiana is an Italian dish made with deep-fried sliced eggplant filling, layered with cheese and tomato sauce, then baked. The origin of the dish is claimed by both the Southern regions of Campania and Sicily.

PREPARATION
Slice the eggplant into medium thick roundels. Put in salted water and keep for a while. Drain and keep aside. Heat some oil, and deep fry eggplants till cooked and golden brown in colour. Line a bowl with some olive oil, start layering the parmigiana with some tomato sauce at the bottom, followed with fried eggplants, tomato sauce, basil, both the cheese in batches and season. Repeat the process until the brim of the bowl. Finally mix some egg yolk with tomato sauce, mozzarella and Parmesan and top up the parmigiana. Bake in a preheated oven at 180 degree Celsius for 10-12 min or until golden on the top.
