  • The ultimate Panna Cotta Recipe - La Spiga Style

  • 1 liter of Cream
  • 500 ml Milk
  • 180 grams of sugar
  • 19.5 grams of Gelatine Leaves (6 pieces)
  • 1 piece of Vanilla Pod
  • 10 grams of Berry Coulis
  • 40 grams of mixed berries


Mix the cream and milk with sugar, vanilla bean and heat until you reach 80°C. Remove from heat and add bloomed gelatine. Stir well.   Pour mixture in individual aluminum molds and set in the refrigerator for 6 hours before serving. Unmold the Panna Cotta in the middle of the plate and garnish with mixed berries, mint an berry coulis.
