The season comes to an end and with it arrives an unforgettable four-handed culinary experience offered by two Michelin star chefs: Miguel Navarro, chef at the Es Fum restaurant of the St. Regis Mardavall Mallorca Resort and Alex Dilling, chef of the restaurant Alex Dilling at the Hotel Café Royal in London will offer on 13th and 14th October a unique culinary experience at the iconic Es Fum restaurant.

Two-Michelin-starred English chef Alex Dilling has followed the invitation to Miguel Navarro’s kitchen to create a four-handed menu that can be enjoyed in the exclusive ambience of the Es Fum. Dilling, who has worked alongside some of the finest chefs in the world where he has honed his technical talent spanning New York, Paris and London, uses classical French references to create modern dishes using the finest seasonal ingredients in the world. He also was the Executive Chef at Hélène Darroze at The Connaught and The Greenhouse, maintaining two Michelin stars for both. Alex’s namesake restaurant opened in September 2022 in five star Hotel Café Royal in London. Here his 34 cover restaurant broke record by achieving two Michelin stars just six months after opening in 2023.

One-Michelin-starred Spanish chef Miguel Navarro, a true culinary talent, began his professional career at the age of 16. After working at well-known establishments in Tenerife like the Hotel Mencey, in the year 2000 he carried out his first apprenticeship at Martin Berasategui’s restaurant in the Basque Country and in 2005 he was contracted by the Hotel Ritz-Carlton Abama. There he formed part of the team which, under Martin Berasategui’s management, was awarded the first Michelin star for his restaurant MB. In 2010 he went to Germany to work with chef Sven Elverfeld at the restaurant Aqua, awarded with three Michelin stars. For three years he was also part of Martin Berasategui's team in Barcelona, serving as Paolo Casagrande's second chef at the Lasarte restaurant, the first to be awarded three Michelin stars in the Catalan capital in 2016. In 2017 he was engaged as head chef at the Es Fum, located in the St. Regis Mardavall Mallorca Resort.

Both have devised a menu as creative as it is sophisticated, interweaving freshness and delicacy in each of its dishes. Cured Kaluga caviar, red prawns, smoked eel and ginger; Focaccia Es Fum 2023; Slow-roasted rack of suckling lamb from Valladolid with olives, anchovy and rosemary; Clam chowder with razor clams, cockles and Sarawak pepper; XL scallops hand-pulled with white truffle from Alba, 36 months old parmesan and yellow wine from Jura, or rooster San Pedro with mushroom jam, chard and Ravigote sauce are some of the dishes of these two exclusive dinners. The finishing touch to this culinary parade will be a delicious reinterpretation of the classic Melba peach prepared by Miguel Navarro.

The menu is priced at € 240 per person, drinks not included, and has a premium pairing option for € 160, with wines selected by sommelier Julianna González from the more than 150 wines in the Es Fum cellar.
