Watch as Riccardo Fabian Ciancilla, from The Ritz Carlton Bahrain, prepares Marriott Bonvoy’s signature cocktail for Middle East & Africa. The video walks you through the steps to recreate his winning beverage at home and tells you more about what inspired him to come up with it.

“The name Appassionato is Italian for a great amount of emotion and passion, and comes from my love for hospitality, being a mixologist, and as well a word in my native language of Italian that best describes what I want to portray. This creation is also a symbol and representation of the hard work and dedication that I have put in to master the craft of mixology. Having worked for Marriott International under the brand of Ritz-Carlton, I also felt this drink and name perfectly described the unique mission and passion our ‘ladies and gentlemen’ put forth daily for our guests and most importantly what drives our company to success.
When I create cocktails, it is not as simple as putting ingredients in a shaker; it’s more than that. I see it as creating liquid science and where each ingredient is carefully curated to create a symphony of flavors for my guests to enjoy, sip after sip.
When presenting the cocktail, I also wanted to relate it to our resort’s scenography by using the golden tree to represent Bahrain’s ‘Tree of Life,’ a mystical tree that has stood for 400 years in the Bahrain desert. The innovation of this cocktail also features many ingredients from different parts of the world and places that have inspired my journey in hospitality with the hopes to be a catalyst to inspire travel with our most loyal guests under the Marriott Bonvoy program.”


  • 30ml lemon juice
  • 30ml passion fruit juice
  • 50ml simple syrup
  • 30ml Bulleit Bourbon
  • 50ml watermelon juice
  • 2 dashes of Angostura bitters
  • Garnish: mint and cherry


  1. Pour the ingredients into a mixing glass.
  2. Add ice into the mixing glass and into a second glass.
  3. Pour the mix into the second glass using a strainer.
  4. Repeat 4 times or until the cocktail has chilled.
  5. Shake for 5 seconds.
  6. Pour into a lowball glass with ice.
  7. Add mint and a cherry as a garnish.
