• Carbonara in Baratollo

INGREDIENTS

  • 150 gms Mezze maniche
  • 50 gms chopped Bacon
  • 2 egg yolks
  • 30 gms grated Pecorino cheese
  • 5 gms cracked black pepper

PREPARATION

Heat a pan, add bacon and cook till brown and crispy. Keep aside.  Combine egg yolk, Parmesan, salt and cracked black pepper in a bowl and keep aside. Boil salted water in a pot and add pasta and cook till al dente or soft. Drain and put in a glass jar, mix the egg mixture and the bacon.  Close the lid and shake well till sauce is well combined. Serve and garnish with grated Pecorino cheese and cracked black pepper.
