• Fettuccini Pesto e Gamberi - An Italian Classic

INGREDIENTS FOR THE SHRIMPS

  • 8 pieces of Shrimps
  • 1 tbsp Olive oil
  • 1 Garlic clove

INGREDIENTS FOR THE PASTA

  • 200 gm Flour
  • 1 egg
  • 1 egg yolk
  • 10 ml Olive oil
  • 5 gm Salt 
  • Water if required

INGREDIENTS FOR THE PESTO

  • 100 gms Basil
  • 1 Garlic clove
  • 10 gms toasted Pine nuts toasted
  • 15 gms Parmesan grated - 15gms
  • 80 ml Olive oil
  • Salt to taste

PREPARATION

For the pasta dough, combine all the ingredients to form a nice firm dough ball. Cover and rest for at least 30 mins. Cut and shape into medium strips using a pasta machine. For the pesto combine all ingredients in a blender or a mortar pestle.  Boil salted water in a pot and add pasta and cook till al dente. In a pan heat some olive oil, add sliced garlic, followed by shrimps and cook. Add pasta and finish with pesto.  Season and garnish with Parmesan and fresh basil.
